Details: Aloo gobi is a classic Indian dish that combines potatoes and cauliflower with flavorful spices. With this bundle you'll receive all of the fresh produce you need to whip up a tasty side dish that pairs nicely with chicken, lamb or fish. Onions, ginger and garlic are optional, but they add an enticing depth of flavor. If spice is not your thing, this bundle also provides the basic ingredients for a creamy cauliflower soup. To make aloo gobi: Boil a few potatoes in their skins until they are cooked through, but not soft. Cool completely, then peel and chop. Cut the cauliflower into small florets and chop half an onion. Mince a clove of garlic and a _” knob of ginger. Heat a few tablespoons of oil in a large frying pan. When the oil is hot, add about a teaspoon of whole cumin seeds. Then add the onion, garlic, and ginger and stir to coat them in oil. Let them cook for a few minutes, then add the cauliflower and cook for a few minutes more without stirring. Stir, then add a few tablespoons of water, cover, and lower the heat, cooking until the cauliflower is al dente. Add the potatoes plus salt to taste and a few teaspoons of garam masala, or a combination of ground cumin, coriander, turmeric and cayenne. Stir to combine, and continue to cook until the potatoes are heated through. Garnish with chopped fresh cilantro.
