Details: The farmers market is full of the flavors of fall, and what better way to feature them on your own table than by serving a colorful and nutrient dense stew. You will receive all of the produce you need to prepare a seasonal stew that is rich and varied, made with the most enticing autumn options available at the farmers market. We will send you 8 different types of harvest-time vegetables: onions, carrots, celery, squash (like butternut and acorn), tomatoes, kale, garlic and fresh herbs. This selection of locally sourced produce makes a delicious vegetarian meal, or you can add chicken, beef or beans to the dish for a bit of added protein. To make a simple stew: Wash all produce and remove peels and stems. Mince 1-2 cloves of garlic and chop all of the remaining vegetables (and meat if using) into pieces of equal size. Brown the meat on all sides in a large dutch oven, stew pot or oven-safe pan coated lightly with olive oil. Sweat the onions, then add the garlic and stir until fragrant. Add the carrots and celery, and give them a few minutes to soften. Sprinkle a few tablespoons of flour or cornstarch into the pan and stir until fully absorbed. Add a few tablespoons of stock and scrape up any browned bits. Add beans (optional) plus all of the remaining vegetables. Gradually stir in about 4 cups of stock, plus about a teaspoon of salt, a handful of chopped herbs, and a bay leaf (optional). Bring to a boil, then cover and place in a 300-degree oven (or continue to simmer on the stove) until all of the ingredients are fork tender, about 2 hours. Add more liquid as needed to avoid scorching the pan. Season with salt and pepper to taste and remove the bay leaf before serving. All vegetables and herbs are sourced directly from local farms including Great Road Farm, Ort Farm, Pineland Farms, Happy Harvest Hydroponics, Terhune Orchards, Jeff
