Details: This bundle contains all of the fresh produce you will need to make a big batch of creamy potato and vegetable stew, including 8 different varieties of produce. This dish is hearty and nutrient dense, made with locally sourced potatoes, garlic, onions, and a variety of seasonal vegetables like sweet potatoes, summer squash, cauliflower, carrots, bell peppers, green beans, and fresh herbs, depending on what is available at the farmers market. Sometimes we also love to make a white and sweet potato mash with roasted vegetables on the side?this bundle offers so much versatility! What will you make? Try this recipe, adapted from Forks Over Knives by Del Sroufe: Wash all produce and remove peels and stems. Slice a large sweet potato, a few large potatoes (more if they?re small), 2 carrots, 2 zucchini and a bell pepper. Break up a head of cauliflower into florets and cut a large handful of green beans into bite-sized pieces. Dice an onion and mince 4 cloves of garlic and a handful of fresh herbs. Place the white potatoes in the bottom of one large lidded baking dish and the sweet potatoes in the bottom of another. Sprinkle the white potatoes with about 2 cloves of minced garlic, fresh herbs, salt and pepper and top with a few cups of stock to cover. Top the sweet potatoes with the rest of the vegetables and a stock to cover. Bake at 450 for about an hour, or until the potatoes are fork tender. In the blender, combine 1 cup of cooked white beans with 1 cup of water until creamy, adding more water as needed. Pour beans onto the white potatoes and mash well, then spread on top of the sweet potato mixture and place under the broiler until lightly browned on top. All vegetables and herbs are sourced directly from local farms including Great Road Farm, Ort Farm, Pineland Farms, Happy Harvest Hydroponics, Terhune Orchards, Jeff's Organics, Russo's Orchard, Sandy Acres, Cranberry Hall Farms, Chickadee Creek Farm, Chia-Sin Farm, and Melick's Town Farm.
