Details: Homemade vegetable stock is nutrient dense, and a key ingredient in many recipes, from soups and stews to purees and sauces. This bundle includes all of the locally grown vegetables and herbs you will need to make a big batch of stock. Each bundle contains onions, carrots and an herb as well as seasonal items like parsnips, leeks, celeriac (a.k.a. celery root), tunrips and fennel. To make your own vegetable stock at home: Thoroughly wash all produce under cool running water, using a scrub brush on sturdier items. Chop all vegetables and herbs and place in a large soup pot ? there is no need to remove the stems and peels when making a stock. Use more distinctly flavorful and deeper hued items (such as beets and fennel) with caution, as they may dominate the stock. Add enough water to cover the vegetables by at least a few inches. Seasoning the stock is unnecessary since the flavors will become stronger as the stock reduced, and you do not want to risk over-salting your stock. Bring to a boil, then reduce to a simmer and cover. Stir occasionally and continue to cook for 2-4 hours, or until the stock has a rich vegetable flavor. Stock can also be prepared in a slow cooker. Strain the stock, pressing the cooked vegetables with the back of a sturdy spoon to extract the liquid. Throw the remaining pulp on the compost pile. We also love making stock at home out of raw vegetable scraps that we have saved during cooking prep throughout the week. Just place them in a large zip-top bag in the freezer until you have enough to cook up a batch, and combine with fresh vegetables for a hearty broth. Store vegetable stock in the refrigerator for up to 1 week, or in the refrigerator for several months. Just remember to leave room at the top of storage containers, since stock will expand when it freezes. Try freezing in ice cube trays and then transferring to zip-top freezer bags, so you can defrost exactly as much or as little homemade stock as you need.
